Preparation steps
- chop the onions into half-rings
- finely chop the garlic
- cut the red peppers into thin strips
- cut the chicken fillet into small pieces
- fry the onion and garlic with half the olive oil for 5 min
- fry the chicken and peppers for 10 min, then add the Cajun seasoning for the last 2 min
- preheat the oven to 175°C
- rinse and drain the kidney beans
- cut the cucumber into long thin strips
- slice the radishes thinly and finely chop the coriander
- mix the cucumber, radish, coriander, and the rest of the olive oil
- squeeze the lime, grate half the green zest, and mix through the cucumber salad
- season the cucumber salad with pepper and possibly salt
- tear the mozzarella into small pieces
- assemble half the wraps with mozzarella and half of the 30+ grated cheese
- spoon the chicken filling onto the prepared wraps and sprinkle the remaining mozzarella and grated cheese
- cover with the remaining tortillas, place on a baking paper-lined baking sheet, and bake for 15 min
- cut the quesadillas into quarters and serve with the cucumber salad
