Preparation steps
- toast chillies and cinnamon for about 8 minutes until fragrant
- soak chillies and cinnamon with porcini in boiling water for at least 15 minutes
- pat chicken dry and season with half a teaspoon of salt and pepper; stuff cavity with one lemon half
- heat oven to 200°C; heat oil and brown chicken on all sides for about 7 minutes
- sauté celery and onion for 6 minutes until lightly golden
- cook garlic and thyme for 1 minute until fragrant
- return chicken breast side up; pour in porcini liquid with aromatics and add salt and pepper; simmer, cover, and bake 50 minutes
- stir in orzo, pushing some into the bird’s cavity; cover and bake 20 minutes until orzo is cooked and has absorbed most of the liquid
- turn up oven to 220°C; uncover and bake 10 minutes until browned on top
- leave to cool slightly for 10-15 minutes
- squeeze over remaining lemon half and sprinkle with parsley to serve
