Preparation steps
- bring a pot of water to a boil
- lower in six eggs and cook for 7 minutes exactly
- cool the eggs under cold running water and peel the shells
- toast sesame seeds and transfer to a food processor
- pulse prawns, lardons, spring onion, ginger, garlic, soy sauce, rice vinegar and sesame oil until combined
- flatten prawn mix, encase a peeled egg, and repeat
- refrigerate the wrapped eggs for 30 minutes
- combine remaining sesame seeds with panko breadcrumbs in a shallow bowl
- crack the last egg into a second bowl and beat
- set up flour for coating
- roll each wrapped egg in flour, then beaten egg, then breadcrumb mix and coat evenly
- stir dipping sauce ingredients in a bowl
- heat frying oil to 170°C in a large saucepan
- turn down to medium-low and fry scotch eggs for 5 minutes, turning regularly, until golden brown
- transfer fried scotch eggs to a paper-lined rack
- serve scotch eggs warm or cold with the dipping sauce alongside
