Preparation steps
- hard-boil and peel the eggs
- cut the eggs in half and separate the yolks
- crush the egg yolks until smooth
- fry the spring onions, ginger, and garlic with half the oil and a pinch of salt for 10 minutes
- warm the remaining oil for 1 minute, turn off the heat, then stir in the rayu spices and seasonings and transfer to a jar
- add rayu solids to the yolk mash, then avoid adding any oil as much as possible; crush until smooth
- whip in the mayonnaise and whisk until lump-free, then bag the mixture
- pipe the yolk mixture into the egg white halves
- scoop rayu over the filled eggs, then drizzle with vinegar
- top with chives, reserved sesame seeds, and a pinch of salt
- top with reserved black sesame seeds
- top with the red oil drizzle from the rayu
