Preparation steps
- soak the skewers overnight
- mix the marinade ingredients
- pour the marinade over the pork and marinate 2 hours or overnight
- preheat the oven to 200°C
- skewer the pork while heating the ridged grill plate
- grill the pork for 5 minutes turning to char all sides
- finish cooking the pork in the oven for 20 minutes until tender
- grate the courgette with salt and drain for 5 minutes
- squeeze out excess liquid from the courgette
- stir in the yoghurt, oil, garlic, lemon juice and salt
- melt the butter until it bubbles, turns light golden brown and has a nutty aroma
- cool the browned butter for 5 minutes and stir into the yoghurt
- sprinkle dried mint on the yoghurt and keep in the fridge until ready to use
- crush the garlic, chopped onion, oil and vinegar with salt into a paste
- mix the paste with the sliced onions, cucumber, peppers and nigella seeds
- mix the dill and mint into the salad just before serving
- assemble the dish with the skewers and serve with cucumber salad and tzatziki
