Preparation steps
- cut watermelon into 2cm wedges and remove skin and pith
- refrigerate watermelon wedges until ready to serve
- simmer lime zest, demerara sugar, vanilla bean paste and water for five minutes
- cool the syrup for 15 minutes
- stir in lime juice to finish the lime syrup
- grind aleppo chilli, sea salt, sumac, demerara sugar and black pepper to make spiced salt
- drizzle half the lime syrup over the watermelon
- scatter mint and basil over the watermelon and spoon over olive oil
- sprinkle a quarter of the spiced salt on top and serve with remaining syrup and spiced salt in bowls
