Preparation steps
- pickle radishes: massage with 3/4 tsp salt for 1-2 min, then add remaining radish pickle ingredients and chill
- rehydrate and tear wakame in cold water for 30 min, then drain
- make lemon soy dressing by shaking lemon juice, rice vinegar, light soy sauce, mirin, grated ginger, and crushed garlic in a jar
- boil water, cook green tea noodles for 3 min, then add cold water and cook 2 min
- drain and rinse noodles under cold running water, then drain well
- mix noodles with sesame oil, cover, and chill until cold
- loosen and separate chilled noodles, then toss with dressing and add drained radishes
- add wakame and avocado slices, then toss gently
- fold in spring onions and basil leaves
- scatter toasted sesame seeds over the noodles and serve
