Preparation steps
- preheat the oven to 220°C
- simmer the gammon with bay leaves and cloves in apple juice 35 min lid on
- arrange the onion and apple slices in a baking dish and drizzle with olive oil
- sprinkle onion and apples with brown sugar and salt and black pepper
- bake the onion and apples 30-35 min until starting to caramelise
- lift the gammon out and discard the string then place it on top of the onions and apples
- fish out the bay leaves, add them to the dish, pour cooking liquid around the onions and apples
- mix the tamarind sauce with the remaining brown sugar and spoon evenly over the gammon
- return to the oven and bake 25-30 minutes until burnished and sticky
- rest the gammon 10-15 min then cut into thick slices and serve with the apples and onions alongside
