Preparation steps
- soak ancho chilli in boiling water for 30 minutes
- squeeze out some of the moisture from the softened ancho chilli
- blend ancho chilli with aleppo chilli flakes, garlic, cumin, cardamom, caraway seed, olive oil, sunflower oil, sugar, cider vinegar, lemon juice and salt
- transfer chilli paste to a bowl and set aside
- blanch turnip in boiling water for 3 minutes
- drain turnips and refresh under cold water, then pat dry and cut into 1cm wedges
- stir turnip wedges and preserved lemon into the chilli paste
- cover and marinate at least an hour
- sprinkle with coriander leaves and serve
