Preparation steps
- preheat oven to 200°C
- quarter red peppers and remove white parts and seeds
- toss peppers with olive oil and salt, roast 35 minutes until soft
- cover hot peppers to cool a little
- blend roasted peppers with roasting juices, coriander, garlic, mild chilli, sweet chilli sauce and cider vinegar until smooth, then adjust salt
- hot-pan cook sweetcorn for 2–3 minutes until lightly blackened, then cool
- soak stale bread in cold water 1 minute, squeeze well and crumble
- mix turkey, egg, spring onion, parsley, cumin, black pepper, garlic and soaked bread to form mince mix
- pour 5mm sunflower oil into a heavy frying pan and heat well
- fry a teaspoonful of mince mix 1-2 minutes per side, then cool a little and taste
- adjust salt and pepper in the uncooked mince mix to taste and shape into golf-ball sized meatballs
- fry meatballs in hot oil in small batches until golden brown all over
- bake meatballs in the oven at 200°C for about 5 minutes until cooked through
- serve hot or warm with pepper sauce on the side
