Preparation steps
- boil water and cook puy lentils 15-20 min until completely cooked
- drain the cooked puy lentils and set aside
- melt butter and olive oil in a sauté pan
- cook garlic and cumin for 1 min
- add tomatoes and cook for a couple of minutes, stirring
- add tahini, lemon juice, water, salt and black pepper; cook gently for a few minutes until hot and thickened
- roughly mash the lentils to a thick, porridge consistency
- spread the lentils on a flat platter and make a wavy pattern
- scatter sliced red onion and the remaining coriander and drizzle over extra olive oil
- serve warm with the quartered hard-boiled eggs alongside
