Preparation steps
- melt butter, dark chocolate, milk chocolate, golden syrup, and vanilla over a gentle simmering water bath
- stir in whole milk and espresso until smooth
- fold in ginger nut biscuits and pecans
- chill the chocolate mixture for 25 minutes until cooled but not set
- line greaseproof paper and spoon the chocolate mixture into a 30 cm long log
- refrigerate the log until set for about five hours
- unwrap and reroll the salami again during chilling to keep its rounded shape
- sift half the icing sugar onto greaseproof paper and roll the log in it
- sift the remaining icing sugar on top and rub it all over the sides
- cut the pecan and gingernut chocolate salami into slices and serve
