Preparation steps
- char garlic, onions and green chillies until blackened
- cool charred salsa ingredients
- blend garlic, onions, and green chillies with avocado, kiwi, coriander, lime juice and seasonings until smooth
- heat frying pan on high; fry one third of tortilla triangles in oil until golden and crunchy for 4-5 minutes
- fry remaining tortilla triangles in oil until golden and crunchy for 4-5 minutes
- turn heat to low and melt butter
- return tortillas to pan and fold in beaten eggs until just set
- spoon half the salsa verde over the chilaquiles
- scatter onion, coriander leaves, green chilli rounds and feta over the chilaquiles
