Preparation steps
- preheat oven to 180°C
- sauté clarified butter, onion, turmeric, and cumin for 10 minutes
- cook tomato paste for 2 minutes, stirring
- tie herbs into a bunch and add to the pot with potatoes, squash, dried limes, green chilli, salt, and water then bring to a boil
- boil gently for 15 minutes until potatoes are semi-cooked
- stir through tomatoes, spinach, and barberries, crushing the limes to release juices
- tip into a roasting tray and bake uncovered for 20 minutes until the sauce thickens and vegetables are soft
- leave to sit for 5 minutes
- serve the stew with a dollop of greek yoghurt on the side
