Preparation steps
- preheat the oven to 180°C
- grease and line the loaf tin or springform tin
- beat the butter, sugar, coconut, vanilla and salt until pale and fluffy about 3 minutes
- beat in the eggs one at a time and mix until well combined
- mix in the ground almonds until just combined
- scrape the batter into the tin
- bake for either 40 minutes or 50 minutes until golden brown and a skewer comes out clean
- cool the cake in the tin until completely cool
- make the water ganache: heat the sugar and liquid glucose in a saucepan until melted and pale amber after about 7 minutes
- stir in the water to make water-caramel, then return to the boil and dissolve again for about 1 minute
- pour the hot water-caramel over the chopped cooking chocolate, wait 3 minutes, then whisk to combine
- whisk in the butter cubes a couple at a time until glossy and syrup-like golden
- spread the ganache over the top of the cake letting it run down the sides
