Preparation steps
- mix garlic, cumin and doubanjiang
- roast peanuts in olive oil for 5 min, stirring until lightly browned and fragrant
- pour peanut oil and nuts into doubanjiang mixture and stir to combine, then set aside
- stir-fry purple sprouting broccoli in hot oil for 4 min until nicely charred and almost tender
- stir-fry lightly bashed garlic for 30 sec until lightly charred
- cook kale with water over high heat, stirring constantly, until wilted and softened
- fry onion with turmeric and salt for 5 min until onion starts to soften
- cook tofu with soy sauce and sesame oil over high heat, stirring constantly, for 3 min until heated through
- return kale and broccoli mixture and fry together for 1 min to heat through
- transfer to a large platter, spoon the spicy peanut oil over the top and serve at once
