Preparation steps
- heat the olive oil in a lidded skillet over medium heat
- add the onion and red bell pepper and cook until softened 5-8 minutes
- add garlic, cumin, paprika, and cayenne if using and cook 30 seconds until fragrant
- add crushed tomatoes, salt, and several grinds of black pepper; simmer over low heat and stir 15 minutes until thickened
- make 6 wells in the sauce and crack one egg into each well
- cover and cook until eggs are set 4-8 minutes
- season the eggs to taste with salt and black pepper
- top with parsley or cilantro leaves and crumbled feta cheese
