Preparation steps
- crush cooked jasmine rice until grains clump
- simmer the rice with stock and water until thick and glossy for 25 minutes
- rest the jook for 5 minutes
- cook olive oil with garlic and ginger for 2-3 minutes until fragrant but not coloured
- simmer turmeric oil with sesame seeds for 2-3 minutes until golden
- stir in garlic and turmeric and cook in residual heat for 30 seconds
- cook chilli flakes and spring onions for 30 seconds and season with salt
- sauté choi sum stalks in olive oil for 1 minute on high heat
- cook garlic with choi sum for 1 more minute until fragrant
- stir in choi sum leaves and transfer to a bowl
- simmer soy sauce, maple syrup, star anise, and water for 2-3 minutes until bubbling
- discard star anise then reserve sweet soy
- assemble bowls of jook and top with choi sum
- spoon sweet soy and turmeric oil over choi sum
- scatter crispy fried onions on top and serve
