a wok/pan over
medium-high heat
scramble beaten
eggs until fully
cooked
remove scrambled
eggs from pan
add remaining
oil and sauté
onion until
translucent and
just browning
stir-fry chilled
rice on high
heat until hot
stir-fry peas
and carrots
until heated
through (~2 min)
add diced
chicken/beef/shrimp/tofu
and heat through
(optional)
drizzle soy
sauce over rice
and mix well
add scrambled
eggs back and
mix until evenly
distributed
season with salt
and pepper to
taste
garnish with
sliced green
onions and serve
