Preparation steps
- thinly slice and blanch the ginger for 3 min
- drain and add ginger to a jar with lemon zest and thyme sprigs
- boil vinegar and caster sugar until dissolved, then pour over the ginger jar
- cool the pickled ginger then refrigerate until needed
- saute the shallots in olive oil for 5 min until softened
- stir in thyme, garlic, salt, and pepper and cook for 3-5 min until fragrant
- stir in peas and sherry vinegar then take off the heat and cool the mixture
- tip the cooled pea mixture into a food processor and pulse with goat's cheese, horseradish, lemon juice, and salt to a coarse paste
- mix pickled ginger with pickling liquor, spring onions, mint, remaining oil, and salt
- spoon the pea dip into a serving bowl and spoon the ginger mixture over, then grate extra horseradish and serve at room temperature
