Preparation steps
- mix yoghurt with salt
- encase and drain yoghurt in fridge for at least 24 hours
- gently heat olive oil for about 7 minutes until tiny air bubbles form
- infuse oil with lemon thyme and orange strips, covered until ready
- blitz blackberries, raspberries, strawberries with sugar and lime juice until completely smooth
- combine remaining berries and cherries with blitzed berry puree
- rest berry mixture in the fridge for a few hours, then bring to room temperature before serving
- spread labneh on a large platter
- spoon berry mixture over labneh
- sprinkle lime zest over the berries
- drizzle infused oil and garnish with orange strips and extra picked thyme leaves
