Preparation steps
- blitz jalapeño, onion, oregano and spring onions until finely chopped
- fry pancetta in 2 tbsp olive oil until it starts to brown
- fry pork shoulder for 6 minutes until lightly browned
- add chilli base and fry for 8 minutes stirring now and then
- add lime halves, chicken stock and simmer, then simmer covered for 70 minutes
- stir 2 tbsp olive oil into the reserved jalapeño and onion mixture
- stir reserved chilli base and chopped coriander into the chilli
- heat oven to 190°C, grease and line a 22cm cake tin
- blitz cornbread ingredients until well combined and pour into the tin
- bake for 25 minutes at 190°C
- turn down heat to 170°C and bake for 6 minutes more
- serve the chilli from the pan with warm cornbread alongside
