Preparation steps
- soak the buckwheat groats 3-4 hours
- combine vinegar, sumac, sugar, lime zest, garlic and onion then pickle at least 3 hours
- whizz buckwheat groats, milk, parmesan, basil, dill and egg yolks into a batter
- stir in ricotta and rest the batter
- whisk the egg whites to stiff peaks
- fold the egg whites gently into the batter
- drain the pickled onions and mix with olive oil, preserved lemon, coriander and pepper
- melt butter in a nonstick pan
- fry pancakes in batches about 4 minutes per side until golden, then drain on kitchen towel
- serve warm hotcakes with salsa and remaining ricotta, drizzle olive oil and grind pepper
