Preparation steps
- massage onion strips of lime skin with vinegar, half a teaspoon of sugar, and a quarter-teaspoon of salt
- pickle onions for at least 2 hours
- heat the oven to 220°C and line a large tray with baking paper
- combine sweet potatoes with three tablespoons of oil, allspice, remaining two teaspoons of sugar, half a teaspoon of salt, and plenty of pepper
- roast sweet potatoes for 20 minutes until crisp and golden-brown
- toss roasted sweet potatoes with any oil left on the tray and cool
- blitz coriander, grated lime zest, the remaining three tablespoons of oil, and an eighth of a teaspoon of salt into a smooth green salsa
- arrange sweet potatoes on a platter and dot evenly with goat's cheese pieces
- drain pickled onions and scatter on top of the cheese
- finish with a drizzle of salsa and a sprinkle of almonds
