Preparation steps
- preheat oven to 150°C
- griddle pork 8 minutes, turning and foil-cover for last 2 minutes
- mix simmering sauce in pot; heat gently until sugar dissolves
- transfer pork to pot and spoon pan juices over
- cover and cook in oven 1 hour, turning in sauce
- turn down to 130°C and cook 2 hours more, turning regularly
- turn down to 120°C and cook 5-6 hours more until pullable, turning from time to time
- cool slightly, then pull pork, discard bones and fatty skin, shred into bite-size pieces and return to pot; stir in reserved sauce and keep warm
- reserve the sauce to a bowl
- toss pomegranate salad in a bowl
- stuff baguette halves with pulled pork
- add pomegranate salad into the bread or serve on the side
