Preparation steps
- place chicken, head of garlic, onion, water and salt in a saucepan; bring to a boil, then simmer 80 min covered
- shred the cooked chicken; discard skin, bones and cartilage
- strain the stock through a sieve; use 1.7 liters and discard solids
- heat olive oil; cook carrots and celery 4 min until slightly softened
- add crushed garlic, bay leaves, thyme and Parmesan rind; cook 30 seconds more
- add grated tomatoes and tomato paste; cook 3 min until tomatoes cook down slightly
- pour in stock; add 1/2 teaspoon salt and pepper; bring to boil then cook 15 min until vegetables are completely softened
- transfer soup mixture to a blender and blitz until completely smooth, then stir back into the saucepan
- cook pappardelle in soup 15 min until al dente, then stir in shredded chicken and cook until heated through
- discard bay leaves and Parmesan rind
- divide soup into four bowls; top with basil and chilli, grind pepper and sprinkle grated Parmesan
