Apple butter galette

Preparation steps
- whisk flour sugar and salt to combine
- add butter cubes and freeze for 30 min
- pulse flour mixture and add ice-cold water and vinegar to form dough
- bring dough together and shape into a round
- refrigerate dough for at least 2 hours or overnight
- heat oven to 210°C
- roll dough to a 35cm circle and transfer to a lined baking tray with a double folded rim
- spread spiced apple butter over the base avoiding the rim
- finely slice apples into 2mm rounds and toss with lemon juice
- arrange apple slices on top of the galette base in overlapping circles to cover
- brush apples with melted butter and sprinkle with sugar
- bake for 30 minutes until golden
- turn tray around and bake for another 20-25 min until golden
- transfer to a rack and cool slightly
- warm jam and calvados to combine and whisk
- brush jam and calvados mixture over the apples
- serve warm or at room temperature with creme fraiche alongside and caramel sauce if you like
