Preparation steps
- crush garlic with red chilli, brown sugar and salt
- mix tomatoes and shallots into the sambal base
- heat rapeseed oil until smoking and pour over the tomato mixture
- roughly smash the tomatoes with the end of a pestle until just broken up
- stir in lime juice and transfer to a serving bowl
- fry peanuts in rapeseed oil until golden 5-7 min
- remove peanuts to paper and sprinkle with salt
- increase heat and sauté shallots, garlic, chilli and anchovies 5 min until softened
- cook tat soi stems 2 min until just softened
- stir in tat soi leaves with salt and cook 1 min until just wilted
- stir in coriander
- s spoon 1/4 of the sambal over the greens and top with all the peanuts
